Himachali Food...

I love HP. I love its people. I love the Himachali culture. The music, such as it is (speaking as Maharsthrian dilettante! tongueout.gif).
But
there's one area that continues to fox me: Himachali food. Haven't had
much of it, barring at the dhabas on the highway. Seems to be, imho,
heavily influenced by its over-bearing Punjabi cousin!
Anyone care to share their views, recipes, addresses of places in HP (preferably in Shimla) related to Himachali food?
Btw,
Chef Singh at Cecil (the Oberoi hotel) seems to have researched &
understood this a bit, but given Cecil's five-star prices who can
sample his fare on a regular basis?!
